Dinner last night was one of those lovely, off-the-cuff recipes K is so good at, and which has been dubbed "Friends and Family Steak."
My parents' "restaurant-style" cooking method (2 tbsp oil - we used garlic & herb infused olive oil, in a saucepan over high heat, bring to "spitting", put steak on for 4 min, then flip and put in oven pre-heated to 425. ~5min for a 1.5" sirloin to reach "Rare").
That's the "family" half.
The "friends" bit was how we seasoned the steak before cooking; one side was
xany's kickin' chipotle rub, the opposite was
tylorael's paprika barbecue rub.
Delicious.
[edit to add the rest of the recipe: we topped it with a reduction of the cooking juices, which were augmented by a healthy splash of pinot grigio, some lemon juice, and some honey]
