This occurred to me as the boss and the other guy and I tried to fight my impending plague by applying Pho with lots of hot sauce to it:

pho tai. the boss gets pho ga w/o salt and lots of bean sprouts. siriacha sauce & limes for me. k likes her pho tai with cilantro and lots of lemon/lime, and the bean sprouts become a finger food.

there's a really nice little place for it right around the corner from the office; the owners and staff know us by name because the boss is there three or more times a week *laugh*

Ooh. You are making me hungry. David and I always eat chicken pho (I can't remember the name) but sometimes he gets pho filled with icky things like tendons and tripe. We are huge on bean sprouts (a necessity!), chili sauce, siriacha sauce, limes, and Vietnamese jalapenos and mint leaves.

We have a place that we hit every weekend that is in downtown Salt Lake (about a half hour drive from where I live). The owners have us on their "recognizable customers" list, but the service isn't the best. Fortunately, the pho is cheap and damn good.

pho tai = regular beef
pho ga = chicken
pho tai tan = beef and brisket, i think [i haven't seen a menu with all the variants in a long time, the place we go has just plain chicken and beef, and i seldom even get a menu when i go there anyways, since i'm a regular. heh]

but, yeah, it's four or five bucks for a big bowl of pho, a buck for bottomless jasmine tea, and a couple dollars for a fresh spring roll or two. . . twenty bucks feeds three folks comfortably.

and pho is one of my favorite dishes. I haven't found a place that serves a better than average version here since I moved back. I miss good pho...it's the TRUE "soup that eats like a meal." :)

Moved back to Northern NJ about two years ago, sadly. There is a "Project Sunshine" in my future, though, but Due West not South.

There are surprisingly few obvious places for pho and the like around here, given the general cornucopia of varied dining options. I probably just haven't looked hard enough...I'm only now coming out of my post-divorce funk. :)
