Proof that I'm too thrilled it's Friday and I got a good night's sleep [and may have been replaced with Folgers' Crystals]. . .
I'm posting a relatively healthy recipe.
aishlynn gets most of the credit for re-creating this from memory after a dinner we had a PF Chang's with a friend, with a little input from Yours Truly. It's become a house favorite.
Oriental Sesame Cucumber Salad
Serves: 2-4 [depending on whether it's served as a side dish or entree]
Ingredients:
- 3 medium cucumbers - peeled, quartered, and cut into 3/4" chunks. Seeds may be removed or left in, depending on preference
- 1/4 cup + 2TBSP seasoned Rice Vinegar
- 1/4 cup water
- 1 1/2 TBSP Soy Sauce [preferably light/low-sodium, but regular will do]
- 1 TBSP Sesame Oil
- 1 TBSP Sesame Seeds [plain or toasted, to preference]
Mix all liquids and add the sesame seeds. Toss with cucumber chunks. Let stand [in refrigerator] for about an hour [and up to overnight - these make a damn fine breakfast] to let the flavors blend and penetrate.
Enjoy like Klingon revenge [best served cold].
