For no particular reason, except that I just ate one, and it was delicious, here is my recipe for Nomlettes.
- 3 or 4 whole eggs
- 1/2 cup fresh salsa (can be replaced with similar amount of diced veggies of your choice; I just like peppers, onions, garlic, etc)
- 1 oz shredded cheese (I prefer sharp cheddar)
- Seasonings to taste
- Optional: 2 oz ham, sausage, torn-up lunchmeat, etc (pre-cooked)
Crack eggs into small skillet and bust up the yolks. Over medium heat, add the rest of the ingredients, stirring constantly. Once the concoction is firm but not dry (it should be very slightly moist and crumbly), remove from heat.
Can be served straight or wrapped in a tortilla shell.
Serves one.
