(Side note, if you know of any way to help with chronic pain, stiffness, and locking in one's hands and wrists, I'm all ears to it--with the exception of any NSAIDs, as I can't take those thanks to being on blood thinner)

I would recommend other anti-inflammatories, such as fish oil, and ice (or other cold/cool compresses) if you can stand it. Checking the inflammation-causing properties of what you're eating - maybe even going so far as to checking for celiac sensitivity, etc - might be warranted, depending. when my inflammation gets bad (hands/wrists/forearms - too much typing), i tend to hit it with a combination of acetomenaphin and nsaids.
My GF has had a revelation since discovering, first by hearsay, and then via 23andMe genetic testing, that folate methylation issues were an underlying cause to several symptoms similar to yours, so this might be something to mention to your medical practitioner as well.

I would recommend doing grip work to train for the monkey bar obstacle - whether it's barbell shrugs/rows, farmer's walks, heavy dumbbell rows, or just hanging from a pullup bar for as long as you can.

My grip is decent, it's a shoulder issue - I can hang, but the swinging is defeating me. My legs are blown from snowshoeing this weekend, I'll try some grip stuff tonight to benchmark.
